Memo
Hilden Brewing Company was established in 1981 by Seamus and Ann Scullion. This was somewhat of a revolution in Ireland being the first brewery to reintroduce real ale and is consequently Ireland's Oldest Independent Brewery. Hilden Brewery is a family run microbrewery located in Hilden outside the City of Lisburn, Co. Antrim. The brewhouse was once the stables of Hilden House, the former residence of the Barbour family. The brewery is situated behind the old Barbour Threads Linen Mill, one of the last surviving working linen mills in Northern Ireland, an industry that N. Ireland is renowned for. Sadly this has just stopped production in July 2006. The brewery is now managed by Seamus and Ann's son Owen who is a qualified and full time brewer. The brewery now produces five ales covering the full spectrum of tastes including a porter, a blonde, a premium red and two amber ales. In addition to these the brewery also produces two bottled beers and is planning to expand to produce the full range. Trips are made to the mainland UK every other week to personally deliver the beer to the door of the discerning drinker at free houses far and wide. The Scullion's introduced Ireland to its first beer festival and these beer festivals are now undergoing something of a revival. Now in its 25th year, the brewery is running a beer and music festival on the bank holiday weekend in August

Memo
When the Johnson family began roasting coffee in the early 1900's, neither the mechanical blender, the liquid cooled roaster, nor the foil-sealed packaging machine which ensure total freshness for ground coffee, had been invented! Technology has improved enormously, yet the basic principles first employed are still very much in evidence, because the driving desire has not changed - the desire to produce coffee of true excellence founded on a passion for a real coffee drinking experience. Now based in County Antrim, Northern Ireland, the Johnson family import only the highest grades of pure Arabica coffees from around the globe. The smoothness of Colombia, the rich bite of Kenya, the individuality of Mocha and Java, the extravagance of Blue Mountain... From their raw state, coffees are blended and roasted on a daily basis before being packed to meet the exact needs of the caterer (either pre ground or whole bean), and in two pack sizes for the retail trade. In addition to the Johnsons brand, the company also blend and roast Bellagio bean coffee for the foodservice espresso sector. A daily delivery service is supported by two factory trained machine engineers and a team of sales professionals who ensure the final product is brewed correctly within the foodservice arena.

Memo
In the mid 1930s, Colonel Harland D Sanders bought a motel and café in Corbin, Kentucky. Despite having tried his hand at several kinds of work – from railroading to operating a steam-powered ferryboat - Colonel Sanders loved to cook and was always experimenting with various combinations of seasonings. So even though there was nothing new about fried chicken, the Colonel found a way to combine 11 herbs and spices with flour to create a finger licking’ good coating. The Colonel’s business and reputation both flourished at a time when most businesses were struggling, but he was forced to sell his burgeoning restaurant when a new Interstate Highway was built through his property. So, at the age of 66, Colonel Sanders found himself travelling the country with his special seasonings, his pressure-cooker and a new plan: franchises.
